Raw Blueberry Pie

    We just made this recipe the other night and it was amazing! Blueberries are very delicious and the nutty crust compliments them wonderfully.






             Crust 
  • 1 C Walnuts
  • 1/2 C Soaked almonds or pecans
  • 1/2 C Dates
  • 1/2 C Coconut
  • 1/2 t. Pumpkin Spice
            Filling
  • 5-6 C blueberries
  • 1 T Lemon juice
  • 1/2 C Orange juice
  • 4 T Psyllium
  • 1/2 C. Coconut
  • 1/4 Dates
  • Honey to taste
  • 1 t. Cinnomon 
 Directions
    For crust process first two ingredients well. Add the dates and process. Add remaining two ingredients and process. Press into a lightly greases pie pan and set aside.
For filling, process 1 C of berries with the rest of the ingredients, except for the dates. Add the dates one at a time. Hand mix the rest of the berries. Pour the filling into the crust and top with shredded coconut. Chill and serve!

A slight variation that would also work (this is what we did) is to use 2 C. fresh blueberries and the rest frozen. If you try this I would love to hear your comments on it, Enjoy!
