I am excited to announce our first blog give-away! I need to drum up some traffic for my website, Naturally Crafted Candles, and I am offering some free candles to those who will help! :-)

I have TWO pairs of 8" 100% Beeswax Taper candles to give away to TWO winners (one pair to each winner). Raw Strawberry Pie

Crust:
2 cups of almonds or pecans
1 tablespoon of coconut oil
1/2 teaspoon vanilla extract
4 - 5 Medjool dates, pitted
pinch of sea salt
Blend together in food processor, spread and press evenly in a 9 inch pie plate coated with coconut oil.
Chill in freezer for 30 minutes before filling (I didn't and it came out wonderful in a glass pie plate)
Filling:
2 cups cashews soaked 1 - 2 hours
1/4 cup lemon juice
1/4 cup agave or honey
3/4 cup fresh strawberries
3/4 cup melted coconut oil
1/4 cup water
1 teaspoon vanilla (or one bean)
1/4 teaspoon sea salt
Blend all together in food processor
Pour half the filling in pie crust - layer with fresh strawberries and then add remaining filling. Place in freezer for 1 - 2 hours until firm.
Decorate the top with sliced strawberries. This pie needs to be kept in refrigerator to keep it's firmness.

Curried Kale

1 1/2 cups olive oil
1/2 cup lemon juice
10 cloves garlic
3 Tbsp curry
1 Tbsp cumin
2 Tbsp sea salt
8 seeded medjool dates
3 bunches kale

For dressing, place all ingredients except kale in blender and blend until smooth.
Remove stem from kale leaves and chop fine.
Pour dressing over greens, massaging it into them.
Marinate for 2 hours.
This keeps well for 3 days.
Serves 8 ~ Enjoy!

Rawvioli

    Very, very yummy!

In a large bowl, marinate:
10 Roma tomatoes, thinly sliced
1/2 C. Olive oil
3 Garlic Cloves, minced
1/2 tsp. Salt

Marinate for at least 15 minutes

Nut Cheese
Prepare by adding the following ingredients into a blender
1 C. Pine nuts
1/2 C. Sunflower seeds
1/2 Tbs. Salt
1/4 C. Fresh Basil
2 Cloves Garlic
1/2 Cup Distilled water

-Place a paper towel underneath dehydrator screens to catch dripping liquid. Place one tomato slice on dehydrator screen. Add one spoonful of nut cheese on slice, top with another tomato. Repeat. Dehydrate for 8-9 hours at 105 degrees F.

Tammys' Greek Salad Dressing

    Greek Salads are my favorite, and my favorite place to get them is at Panera's. They have the most amazing dressing, so this is my take on it!

1 C. Olive oil
3 tsp. Garlic Powder
3 tsp. Dried Oregano
3 tsp. Dried Basil
2 tsp. Ground pepper
2 tsp Salt
2 tsp. Onion powder
1 tsp. ground mustard
1 tsp. Rosemary
1/2 C. Vinegar ( I use either apple cider or pomegranate)

-Blend for a few minutes in blender until very smooth.

TIP from Tammy: We go through a lot of this, so what I do is make 4-5 individual batches and put them (only the dry ingredients) in snack bags so I can whip one out whenever I need!

Meatless Loaf

This recipe is from Uncook by Juliano submitted by Mrs Fucci
1 1/3 cups walnuts
1 1/3 cups sunflower seeds
1 1/3 cups almonds
1Tbs minced garlic (1 tsp powder)
1/2 cup chopped parsley (3 Tbs dry)
1/2 cup chpd celery
2 cups marinated portabello chpd (I used eggplant)see below
1 Tbs onion,chop (1 tsp dry)
1/2Tbs minced ginger (1/4tsp & 1/8 tsp powder)
2Tbs fresh rosemary (2 tsp dry)
1 Tbs fresh tarragon (1 tsp dry)
1 cup red bell pepper/chpd
1 Tbs jalapeno (1/4 dry)
1 1/2 tsp cumin seeds (1/4-1/2 powder)
1/2 cup olive oil (or flax meal & water to =)
2-6hrs before:(or overnight)
1-soak sunflower seeds and almonds in water to cover
2-marinate portabello (or eggplant) in 1/2 cup Bragg's with 2 Tbs oil
1/2 hr before:
soak walnuts
Drain everything, rinse.
Nuts seeds through juicer or processor til smooth (use the marinade from the portabello if processing )
Everything into bowl and mix well.
Shape into patties, dehydrate till dry. YUM!
 
TIP from Mrs. Fucci:  I haven't made this for years. It delicioso. :) The original recipe made this into a loaf, but I always made patty's because I had the round dehydrator and couldn't make a loaf. But this can be served as a meat(less) loaf. I substituted eggplant for the mushrooms. If you do, chop them into small dices or pulse chop in the processor
I also used dry spices instead of fresh, so those amounts are in () Lots of ingredients, very easy to make.

Fantastic Falafels

    From  Rejuvenate your Life , submitted by Mrs. Mary Fucci.........

3 cups sprouted chickpeas (measure after sprouted)
2 cups soaked sunflower seeds(measure after soaking)
2 Tbls water
1 bunch parsley (I didn't have)
1/2 small onion
2 tsp salt
lots fresh black pepper
1 1/2 tsp coriander
2 tsp cumin
2Tbs flax meal
4 garlic cloves-crushed
2 Tbs.olive oil
2 Tbs lemon juice
1Tbs cumin seeds
1Tbs onion pwdr
1Tbs chickpea miso (used what I had)
Process half the chickpeas at a time with 1 Tbs water(each time) till smooth-put in bowl
Process parsley and onion-add to bowl
add rest ingredients to bowl, mix well
roll into small balls and place on trays-flatten slightly with fork
dehydrate 12 hrs to dry-best if no muchies inside.
 
TIP from Mary : I find the sprouted chickpea taste strong, so I didn't like these alone unless dipped in vegannaise :) but were great in salad or on a "sandwich"

Broccoli Carrot Salad

    Yummy salad!

2 C. Broccoli florets
4 C. Carrots (grated)
1 C. Raisins
1 C. Sunflower seeds
1 Small chopped sweet onion

Dressing:
1 C. Mayonnaise (RAW RECIPE here)
2 Tbs. Maple Syrup

Caesar Dressing

 Really good Caesar dressing!

1/2 C. Sunflower seeds, soaked
2 Tbs. Tahini
3 Tbs. Lemon juice
1 Tbs. Olive oil
1 Clove Garlic
1 tsp. Miso
1/2 tsp. Salt
1/2 tsp. Kelp
1/2 tsp Pepper
1 tsp. Syrup
1/2 C. Water

Blend all ingredients. Chill, and serve!

Vanilla "Ice Cream"

 This Ice cream is wonderful with a slice of Apple pie..........

1 C. Almond milk
1 C. Coconut water
3/4 C. Coconut meat
1/2 C. Dates, soaked
2 Tbs. Coconut Oil
Vanilla

-Blend all ingredients in blender
-Put in ice cream maker, or freeze in ice cube trays and run through Champion.

Apple Pie

    This apple pie is amazing..... words cannot describe how awesome it is, you will just have to try it yourself :-)

Crust:
3/4 C. Pecans
3/4 C. Walnuts
2 Dates
1/8 tsp. Salt
1 1/2 Tbs. Syrup
1/2 tsp. Vanilla
Filling:
6 Apples
1 tsp. Cinnamon
1 Tbs ground Flax
1 tsp. Lemon juice
1/4 tsp. Salt
1/4 C. Honey
4 Dates
1/2 C. Raisins

-Peel all apples, process three into small chunks. Transfer to a bowl and add flax, salt, honey, cinnamon, lemon juice, processed raisins and dates. Coarsely chop last three apples, add to mixture. Stir and pour into crust, Enjoy!

Raw Tomato Sauce

    This was one of Mamma's staples during the 21 days Raw! She had it over shredded zucchini with the Parmesan cheeze, and Sausage "meet".

1 onion, quartered
2 lbs plum tomatoes
1 C. firmly packed fresh basil
1 Tbs. salt
1/4 C. Olive oil

-Chop onions in food processor, place tomatoes and basil in and chop
-Place in colander, sprinkle with salt and let sit one hour stirring occasionally
-Add oil and stir

TIP-if you don't let the tomato water drain thoroughly, when you add the oil it will separate.

Parmesan cheeze

    This is wonderful sprinkled on many of the different recipes.

1 C. sesame seeds
1/4 C. Nutritional Yeast
1 1/2 tsp. onion powder
2 1/2 tsp. garlic powder
1 1/2 tsp. salt

Grind the sesame seeds, add the rest of the ingredients by hand.

Sausage "meet"

    Both the Sausage and Taco meets are wonderful, we use the sausage meet on Raw Spaghetti.

1 C. Walnuts
1 1/2 tsp. onion powder
1/2  tsps. garlic powder
1/2 tsp. ground fennel
1 1/2 tsp. oregano
1 1/2 tsp. Bragg's
1/4 tsp. salt

Blend in food processor. Enjoy!

Taco "Meet"

    This recipe was a wonderful addition to our diet during our 21 days raw! We enjoyed it on the RAW CRACKERS with salsa.......

In a food processor using the S blade, add:
2 C. soaked walnuts, strain and discard water
1 Tbs. Cumin
1 Tbs. Coriander
1-2 Tbs. Nama Shoyu (raw soy sauce), or Bragg's liquid Aminos
1/4 C. Fresh Cilantro

In the food processor, blend the ingredients until it looks like ground beef (about 15 seconds). Note: you might have to stop the machine and use a spoon to help mix the ingredients. Blend will but keep the "meet" texture looking like ground round.

TIP: Soaking seeds and nuts releases enzyme inhibitors, making them easier to digest and promote health. Generally 4-8 hours is sufficient for seed or 12-24 hours for nuts.

Magnificent Mayonaise

From the book Rejuvenate Your Life

1 Cup soaked almonds
1 Cup water
1 clove garlic
1/2 tsp. salt
2 lemons

Blend and slowly add 1/2 Cup olive oil until whipped.

Basic Burgers

    This recipe is from the book Rejuvenate your Life, and it was sent to me by Mrs Mary. Thanks!


1 cup carrot or beet pulp
1 cup almonds ground
3 Tbs flax meal mixed with1/4 cup water
1/4 red onion minced
1 large celery stalk, minced
1/2cup parsley, diced (I didn't have this)
1/2 red bell pepper
1 tsp salt
pinch cayenne
Mix all together, form patties, dehydrate 8hrs, flipping over midway
